· ½ chicken breast with skin
· 50 g bulgur groats
· 1/2 red pepper
· Handful of cherry tomatoes
· 2 lettuce leaves
· 1 kiwi
· 1 mango
· Handful of sprouts
· 1 ball of mozzarella cheese
· ½ teaspoon oregano
· Salt and pepper
· Oil
· Olive oil
Cut the chicken breast in half and slice both pieces lengthwise. Finely dice the peppers and slice the mozzarella cheese. Stuff both chicken halves with peppers and cheese, season with salt, pepper and oregano and pin with toothpicks. Grill on a frying pan with a spoon of oil.
Cook bulgur groats according to the instructions on the package and season with salt and a teaspoon of olive oil.
Cut the chicken into slices and place in a lunchbox on top of the groats. Add the sliced fruit and vegetables drizzled with olive oil.
