Pancakes:
· 1 egg
· 100 g wheat flour
· Handful of spinach
· 80 ml water
· 100 ml milk
· 1 tbsp oil
Cream cheese:
· 200 g cream cheese
· 100 ml natural yogurt
· 100 ml 18% cream
· Salt and pepper
Additions:
· Lettuce
· Cucumber
Optional:
· A few slices of ham
· A few slices of cheese
Wash the spinach and place with the remaining ingredients for the pancakes in a bowl. Blend with a hand blender to make a smooth, pourable mass. If the mixture is too thick, add a little water. Heat the oil in a frying pan and fry the pancakes.
Place the cream cheese ingredients in a bowl and blend until smooth, season with salt and pepper.
Spread each pancake with the cream cheese, place lettuce leaves and sliced cucumber, optional slices of ham and cheese. Roll up and cut into 3 pieces. Put it into a lunchbox and add your favorite toppings such as cherry tomatoes, banana, nuts or hard boiled egg.
