1 kg pork ribs
2 tablespoons oil
sprig of rosemary
4 cloves of garlic
4 bay leaves
1 chilli pepper (can be dried)

Step 1
Cut the ribs into small pieces. Season the meat with pepper and salt, and rub it with spices.
Step 2
Heat oil in a frying pan. Add the meat and fry it on each side until golden brown. Then pour a little water over the ribs – add just enough to cover the bottom of the pan, or about 100 ml. Add the chopped garlic, chilli, rosemary and bay leaves. Cover the pan and reduce heat to medium. Braise the ribs for an hour, until they are tender. Flip them over a few times while braising. During the process, there needs to be some water in the bottom of the pan at all times – keep checking if it has not evaporated and add a little bit more if necessary.
