· 1 kg cottage cheese
· 1 glass of milk
· 2 packets of sugar-free pudding powder
· 5 eggs
· 3 tbsp xylitol
· 2 peaches
· 1 glass of blueberries
Grind the cottage cheese three times.
Add the cheese, milk, pudding powder and egg yolks into the mixer bowl and mix until smooth.
In a separate bowl, whisk the egg whites until stiff.
Mix both together with a spoon and add the xylitol.
Line a cake pan with baking paper and pour in the cheesecake mix.
Cut the peaches into thin slices. Put the fruit on top of the mixture.
Bake at 170°C for about 50 minutes. Let cake cool with oven door slightly open.
