Roasted organic pork ham with fruits


·      1.5 kg raw pork ham

·      600 ml of water

·      60 g salt

·      5 cloves of garlic

·      5 grains of allspice

·      2 bay leaves

·      A pinch of black pepper

·      1 orange

·      Handful of blueberries

·      Handful of lettuce


Pour water into a bowl, add salt, bay leaves, allspice seeds and finely diced garlic. Mix everything thoroughly. Put the ham so that the water covers it all. Then put the meat in the refrigerator for 24 hours.

Take out the ham, dry it thoroughly and rub it with a pinch of salt and pepper. Put the meat in a heatproof dish or baking pan and put it in a preheated oven at 190°C.

Bake for 1.5 hours. For the last 10 minutes, increase the temperature to 220°C so that the ham browns nicely.

Remove the meat and set aside tocool. In the meantime, arrange the lettuce on a platter, place the cooled ham and top with sliced in eights oranges and blueberries.
