Cheese is made in the process of protein and fat detachment in the form of a clod caused by rennet or natural acidification and processing. One of the most popular types of sheep cheese is the Polish oscypek, which is hard, usually smoked cheese of characteristic taste and aroma. It is shaped in special moulds, soaked in brine and matured. Organic sheep cheese may be served as tasty starter or added to a variety of dishes.
