Ribs are a cut of pork taken from the half-carcass. They consist of bones, muscles on the outside and inside between the bones, and fat section. European ribs have very delicate meat. The colour of the meat is light pink and the fat is creamy or light pink. Culinary applications: perfect for grilling, roasting, stewing, smoking as well as in different kinds of soups or the Polish bigos. One popular dish are slow-roasted ribs in a slightly spicy barbecue sauce.
